when i was out for breakfast in vagas a couple at the table expressed interest in the eggs benedict. i had read kitchen confidential and the author explained why he would never order that in a restaurant, how hard it is to keep the hollandaise sauce. i passed that knowledge on to them but they didn’t listen and both ordered it. later in the day they told us how they both started to feel sick in the elevator on the way up to their room and had to fight over who would get to use the bathroom first. they should have listened to me.
i held off on reading bourdain’s book until recently. it’s a well-written, enjoyable and surprisingly self-aware look at food and its preparation. you think bourdain is gonna come off as a class A cunt, but he’s one step ahead of you.
